Pasta with bacon, green peas and saffron

This is a really simple dish, because it doesn’t need a lot of time to prepare it and it’s pretty easy. Moreover, I think it’s suitable for winter and summer either, because if you change some ingredients, such as tuna or tomatoes instead bacon, you can prepare a fresh pasta salad, with the marvelous flavor that saffron has!

INGREDIENTS (4 PEOPLE):

  • 350g (about 12 oz) of “short” pasta, such as penne or farfalle;
  • a jar of parboiled green peas
  • 100 g (about3,5 oz) of sliced bacon, finely diced;
  • 1 little onion;
  • 3 tablespoons of olive oil;
  • 1 sachet of saffron;
  • black pepper;

Preparazione

Pour the water for pasta into a pot and boil it, meanwhile mince onion and fry it into a big pan with 3 tbsp of oil. Add the diced bacon and keep on high fire until the bacon gets browned. Drain green peas, keeping some water into the jar, add them into the pan and mix it up. Cover the pan and cook for 10 min. When water is boiling, add salt and pasta, and switch the sauce off. Taste pasta and when it’s almost cooked ( 1 minute earlier than the usual cooking time), strain it, but keep one cookware of water where you will melt the saffron. Put the pasta in the pan, add the dipper with saffron and mix it well, until the sauce gets dry. Refine the dish adding a grinded of pepper. Serve hot and you can grate some Parmigiano or “Ricotta salata” on it, if you want!
